Ingredients:

  • 1 pound Certified Angus Beef top sirloin cap, cut in 1 1/2-inch cubes
  • 1/2 c. 
  • 3 dried pasilla peppers
  • 2 teaspoons salt
  • 1 tablespoon dried oregano
  • 1/2 cup red wine vinegar
  • 8-inch skewers as needed

Instructions:

  1. Mix ground meat, breadcrumbs, onion, garlic, Cajun seasoning, salt, pepper, and egg; shape into meatballs.
  2. Brown meatballs in skillet; set aside.
  3. Sauté onion, bell pepper, celery, and garlic; add diced tomatoes, tomato paste, Worcestershire sauce, hot sauce, Cajun seasoning, salt, pepper, and chicken broth.
  4. Simmer sauce until thickened; return meatballs to skillet.
